Farm-to-Table Freshness

The heart of our culinary philosophy is simple: fresh ingredients taste better. Much of what we serve is grown on our 3,000-acre Gallon Jug Estate Organic Farm or sourced from trusted Belizean producers.

  • Native crops such as chaya, cassava, cacao, plantains, and heirloom vegetables
  • Orchard fruits including pineapple, mango, citrus, and starfruit
  • Estate coffee and honey, plus eggs from our free-range chickens

Our chefs create thoughtfully curated menus for breakfast, lunch, and dinner—blending international technique with Belize’s culinary heritage.

  • Lunch: Seasonal salads, grilled specialities, locally inspired favorites and hearty garden-forward plates
